The secret behind keeping their full flavour lies in the preparation of the marinade sauce, using a base of olive oil, vinegar, paprika and salt. Once the sauce has been prepared, the cleaned, cooked flesh is fried in olive oil, before finally adding bay leaves, pepper and cloves.
