As with the cockles, the clams are left to soak in seawater when they reach the factory to clean them of any sand. They are then cooked and washed in warm brine where any impurities are washed away. The clams that undergo this process are called CARPET SHELLS and they are sourced from the Ría de Arousa and the Ría de Muros.
